  • Fish portion size: How much do I need per person?

8-12 oz. of uncooked fish per person.

  • Lobster cooking times?

You should always steam lobsters, do not boil them. Add 2-3” of water to the pan and add salt. Bring the water to a boil. Once the water is boiling, place lobsters in the pot of steaming water for the following times:

    • 1 - 1 1/4 lb. - 15 minutes
    • 1 1/2 lb. - 18 minutes
    • 2 - 3 lb. - 20 minutes

For the lobsters that are over 3 pounds, steam for an extra 5 minutes per pound.
